Museo del Sombrero de Paja Toquilla. At the museum, you can see a few exhibits, as well as women and men making the hats themselves. There are also a lot of hats for sale, from the reasonably priced to the very expensive. The admission is free, and if you go to the back of the museum and up the stairs there is a terrace with a beautiful view overlooking Cuenca and its river.

Just down the street - left at the front door, 100 feet and left again into the "museum". There is a bit to learn there, of course, but it's more likely the owners want you to buy one of Cuenca's traditional products, the so-called Panama hat.

Tip: don't miss the slightly damaged and much less expensive ($5, anyone?) hats. You have to ask for the seconds and see what they've got at the moment. Expect to pay $30+ for a first.
