With frequent Kardashian visits and almost daily celeb sightings at their swanky nightclub 1OAK, The Mirage carries its love for pop culture icons into the culinary world with "Top Chef" star Tom Colicchio's restaurant called Heritage Steak. Carefully positioned off the casino floor under the resort's massive greenhouse atrium, Heritage has an open-air, modern and definitively "woodsy" flair. From the tables, floor and ceiling all crafted from natural wood planks to the neatly-stacked ginormous wall of white oak bundles, it was not hard to come to a rather obvious conclusion: "We get it, Tom. You cook everything over wood." Normally a lover of wood-grilled steaks, seafood, and veggies, my first trip to Heritage Steak left me shockingly unimpressed. My in-laws, husband and I started off with the wood-grilled (Surprise! We grill it over wood!) Soy-Chili Glazed Skewers. We ordered the skirt steak, scallop and chicken wing varieties. They were, in a word, "Eh." The entrees weren't much better, and I left with 3/4 of my $60 wood-grilled ribeye steak in a doggie bag (which none of us ever bothered to finish off later, which rarely happens in our family of steak lovers).

Subsequent trips to Heritage Steak were similarly underwhelming (how do you mess up lobster?!), but we kept returning because my co-diners really liked the place. "Am I the only one in this family with taste buds?!" I raged.

My denouncement for all things Colicchio became a bit of running joke between my husband and, and celebrity chef that he is, his mug began to show up everywhere I went. Television, billboards, posters... I couldn't get away from the guy! And adding insult to injury, my in-laws kept inviting me to pricy dinners at Heritage Steak, causing me to feel guilty for ordering $60-$80 dinners that I barely touched. Just as I was looking into how to send my wood-grilled Collicchio steak leftovers to starving kids in Africa, something wonderful happened. On this last trip to Heritage with the in-laws last month, my Colliccio-itis abruptly ended. I must have finally ordered the right thing, and I "got" what my family was raving about all this time. On this night, I enjoyed a lovely New York Strip with a creamy bearnaise (the sauces are not on the menu, so make sure you ask!) which I savored every last bite of, even finishing off the delicious meal by splitting a decadent chocolate lava cake with the husband. Yum, yum.

My fiance and I LOVE Tom Colicchio, so of course it was mandatory to visit his newest restaurant on The Strip. If you LOOOOOOOOOOOOOOOOOOOOOVE Craftsteak like we do, you'll be in for a surprise. Do NOT expect Craftsteak haha. Heritage is an entirely new creation by Chef Colicchio with surprising and unique twists to traditional dishes. My fiance describes Heritage as Craftsteak's weird cousin. He says, "it's the chef playing with the classics in new and exciting ways.
They may not all be home runs, but it's refreshing to see chefs swinging for the fences."

The atmosphere is entirely different from Craftsteak, very open. You can find the restaurant right as you enter Mirage from the lobby. There aren't doors closing off the restaurant from the rest of the building. In fact, it's an open seating area with short walls to delineate it as a separate entity from the casino floor. There aren't paintings of cows everywhere that stare at you as you scarf down their sisters. Instead, the decoration here consists of wood blocks, representing Chef Colicchio's focus on preparing meats over an open flame at Heritage, whether it be wood-burning ovens or charcoal grills.

The menu is fascinating. Our eyebrows were raised at almost every dish description. Our order for the night consisted of the beef tartare (of course, since Craftsteak is known for it's wagyu tartare, we must try the tartare here too), charred octopus, ash-roasted bone marrow, and Tabasco-pepper Kobe skirt with BBQ foie gras and fingerling potatoes as our sides.

The beef tartare was... interesting.. not good, not bad, just interesting. Here's the description for you to decide: beef tartare with pickled beech mushrooms and bok choi kimchi. It wasn't our favorite, but it wasn't bad. I'm still glad we tried it cause it's just so different, and you really have no idea of what to expect. The charred octopus was just heavenly. We thought we had the best octopus at Milos at Cosmo, but we were wrong. This octopus dish at Heritage, which included leeks, potatoes, roasted peppers, and almonds, was just so incredibly good. The octopus was cooked perfectly, with a slight resistance as you bite in, and a juicy, tender center. We found our new favorite octopus dish. The ash-roasted bone marrow was also good, can't really go wrong with ordering marrow! The Tabasco-pepper Kobe skirt was also a dish that had us raising our eyebrows. Our waiter insisted that we try it, and man we are glad that we did. There's a slight kick to the dish that does not overpower the meat. Who were we kidding, any steak dish from Tom Colicchio is great; never question the man! The fingerling potatoes were of course DELICIOUS, since he's always talking about them. The foie gras was also DELICIOUS, cooked perfectly of course. The interesting thing about the foie was that the dish included blueberries and peanuts, with some spice I don't recall at the moment. I haven't had fresh blueberries with foie before, but it was a great combination.

All in all, I loved it here. I don't love it as much as Crafts, but I still would come back to try other dishes. My fiance and I were completely stuffed from our late 2pm lunch at Rollin Smoke, but the food at Heritage were good enough that we had kept eating and were able to savor every last bite. I also highly recommend this restaurant.
